 Prosciutto
[proh-SHOO-toh]
The Italian word for "ham," prosciutto is a term broadly
used to describe a ham that has been seasoned, salt-cured (but not
smoked) and air-dried. The meat is pressed, which produces a firm,
dense texture. Italy's Parma Ham is the
true prosciutto, although others are also now made in the United
States. Italian prosciuttos are designated prosciutto cotto,
which is cooked, and prosciutto crudo, which is raw
(though, because of its curing, ready to eat). This type of
Italian ham is also labeled according to its city or region of
origin, for example prosciutto di Parma and prosciutto
di San Daniele.

right on Boulevard. Go Left on Edgewood. Go Left on

on the left hand side. Look for the valet parkers.

Downtown Atlanta: Follow J.
W. Dobbs for about 1.75 miles. (J. W. Dobbs turns into
Irwin.) Go over the railroad tracks, then take an immediate
right on KROG. 500 feet in front on the right is the
STOVEWORKS building. Rathbun's is in the right hand side of

Buckhead: South on Piedmont, left
on Monroe (turns into Boulevard), left on Edgewood, Go Left
on Krog Street. Rathbun's is in the STOVEWORKS
Building on the left hand side. Look for the valet parkers. |

| From 285/Perimeter area:
Go South on 285 to 85 South to 75
South. Take the Freedom Parkway Exit. As you exit the
off ramp, go right on Boulevard. Go Left on Edgewood.
Go Left on Krog Street. Rathbun's is in the STOVEWORKS
Building on the left hand side. Look for the valet parkers.

Virginia Highland Area: Go
south on North Highland. Go Left at Sotto Sotto &
Fritti onto Elizabeth. Go right at the red light onto
Lake. Follow about 1/2 a mile past the sharp corner.
After the sharp corner, go left onto Krog. (If you go
over the Railroad tracks, you have gone to far) 500
feet on the right is the STOVEWORKS building. Rathbun's is
in the right hand side of the building. Look for the valet
parkers.

the Airport: Go north on 85 and
follow the downtown signs. Take the Freedom Parkway
Exit. As you exit the off ramp, go right on Boulevard.
Go Left on Edgewood. Go Left on Krog Street.
